Grease traps

Operating principle

Grease traps play the role of discharging wastewater from catering and food services before its passage into the sewerage system. They have two functions: settling and separating natural fats by flotation. Dirty water is loaded with grease and suspended solids (peel, pieces of food, etc.) which get into the pan and plunge to the bottom of the tank. Fats rise to the surface, freeze and aggregate.

Criteria for selecting a grease tray

The size of the grease tray is set on the basis of a number of cumulated criteria such as:

• maximum number of meals served on the busiest day of the week or month,
• volume of consumed water,
• output,
• level of ground water
• temperature of effluents
• nature of detergents used ...
